Upon learning about the news of Mr Scott’s death, Laura was shocked and immediately decided to cancel the garden party out of respect for the family of the deceased. When Laura proposed this to Jose, she was annoyed and made this remark.

The author wants to highlight the lack of morality and sensitivity of the elite class towards the working class and thus the social discrimination, Jose thinks that Laura is being absurd and giving too much importance to such a trivial matter, that is the accidental death of Mr Scott, a working class member. To her, cancelling their party over it will be an unnecessary sacrifice. Nobody expects the rich to sacrifice for the poor-this is the lesson which the privileged Sheridans grew up with.
